Salmon Croquettes
Simple. Delicious.
This recipe is sure to have the whole family enjoying!
Ingredients
2–3 cans salmon (drained, skin & bones okay)
½ cup pork rind crumbs (panko-style)
1 scoop unflavored beef gelatin
2 eggs
1–2 tsp onion powder (or finely minced onion if tolerated)
½ tsp garlic powder (optional)
Salt to taste
Tallow (for frying)
Instructions
In a bowl, combine the salmon, pork rind crumbs, gelatin, eggs, and seasonings.
Mix until you have a thick, moldable batter. If too wet, add more pork rinds. If too dry, add another egg.
Shape into patties (small or large depending on preference).
Heat tallow in a skillet over medium heat.
Fry patties until golden brown and crispy on both sides (about 3–4 minutes per side).
Drain on a rack or paper towel. Serve hot.
Notes:
For strict carnivore: stick to powdered onion/garlic only, or skip them altogether.
Works great as meal prep — patties can be refrigerated and reheated.
Pair with a dollop of sour cream, or just eat plain.
