Salmon Croquettes

Simple. Delicious.

This recipe is sure to have the whole family enjoying!

Ingredients

  • 2–3 cans salmon (drained, skin & bones okay)

  • ½ cup pork rind crumbs (panko-style)

  • 1 scoop unflavored beef gelatin

  • 2 eggs

  • 1–2 tsp onion powder (or finely minced onion if tolerated)

  • ½ tsp garlic powder (optional)

  • Salt to taste

  • Tallow (for frying)

Instructions

  1. In a bowl, combine the salmon, pork rind crumbs, gelatin, eggs, and seasonings.

  2. Mix until you have a thick, moldable batter. If too wet, add more pork rinds. If too dry, add another egg.

  3. Shape into patties (small or large depending on preference).

  4. Heat tallow in a skillet over medium heat.

  5. Fry patties until golden brown and crispy on both sides (about 3–4 minutes per side).

  6. Drain on a rack or paper towel. Serve hot.

Notes:

  • For strict carnivore: stick to powdered onion/garlic only, or skip them altogether.

  • Works great as meal prep — patties can be refrigerated and reheated.

  • Pair with a dollop of sour cream, or just eat plain.
